Leftover Rotisserie Chicken
6 eggs
Mushrooms
Onions
Swiss cheese
Mix all that stuff together and shove into mini muffin tins. Bake for 30 minutes at 350. Watch husband gorge himself.
Small details... The mushrooms and onions were originally sautéed and leftover from some pasta madness I tried to make the other night. Used one breast from the yummy $4.99 Kroger rotisserie chicken. Shredded the Swiss cheese. Baked for 30 minutes at 350. Got 18 mini eggy things out of it all. High protein & low sodium goodness.
